Menu Plan Monday for August 27, 2012

It's been a while since I've done a MPM post; our menus are usually boring so I don't bother. Lately, however, we've been trying to eat better. Not necessarily lighter, because a) I'm a big believer that you should try to cook using few processed foods (although sometimes there's no substitute for cream of whatever soup) even and especially if that means cooking with cream and butter, and b) I don't think kids should eat diet foods or a whole lot of artificial sweeteners. My kids drink the occasional glass of Crystal Light fruit punch or other artificially sweetened stuff, so obviously this is not a hard and fast rule, but it's something we're working on.

I tried to keep the dishes relatively easy, although some of it requires turning on the oven (not ideal in a week where we're expected to see at least mid-90s temperatures every day) and some of it, like the caramelized onions for the tart, will take some time.

Breakfasts:

  • poached egg, fried potato with garlic and onion, fruit
  • oatmeal with blueberries and brown sugar, milk
  • breakfast nachos with pinto beans, Monterey jack cheese, avocado and Greek yogurt
  • Greek yogurt with honey and fruit
  • oatmeal with strawberries and brown sugar, milk

Lunches, all served with fruit:

  • sesame chicken and stir-fried vegetables
  • chef salad
  • tilapia tacos
  • Caesar salad, grilled cheese sandwich
  • ham and cucumber tea sandwiches

Snacks:

  • Alton Brown's ginger almonds
  • lightly steamed carrots and/or seeded crackers, spinach dip made with Greek yogurt
  • fruit
  • tomatoes (not a normal snack, but when they're in season I eat as many as I can)

Dinners:

  • taco salad with avocado and pinto beans
  • roasted chicken, sauteed sweet potatoes, roasted asparagus, mashed potatoes
  • chicken-stuffed mushrooms, brown sugar glazed carrots, salad with raspberry vinaigrette and homemade croutons
  • tilapia, wild rice with sauteed mushrooms, roasted broccoli, chocolate truffle tart
  • chicken salad with grapes and almonds on Italian bread, fruit salad
  • zucchini noodles with tomato sauce and meatballs. The boys will probably have Ronzoni Smart Taste noodles instead (in my experience they fill you up the longest).
  • caramelized onion tart with cheese (either Brie, Gouda or Muenster; I haven't been to the store yet to see what they have), tomatoes, salad with homemade croutons

  1. oh my everything looks good and im so hungry right now. we just had taco salad with black beans on sat night and it was a hit
